Air-fryer Veggie Wonton Rolls

Indo-Chinese food is very simply my favorite kind of fusion food ever. It has all the spiciness, tanginess and sweetness that brings your flavor palette alive with every bite. Whether its Manchurian or Fried rice, noodles or spring rolls, I could gobble everything up without stopping.

Today I bring to you a very simple airfryer appetizer recipe. These are actually just like regular spring rolls, but made with ready-made wonton wrappers and air-fried to make them crispy and yummy. The filling is made with noodles, tofu and veggies stir-fried together and then wrapped in a wonton roll (like shown in a video).

Recipe

1. In a pan with 2 tbsp oil, add 2 tbsp minced garlic, 1 tbsp minced ginger, and 1/2 cup chopped green onions. Cook till soft and fragrant for a couple of mins.
2. Cook 1 pack of noodles on the side and cut up or crumble the tofu (~1 cup) into pieces. I used silken tofu but you can use any, just makes it’s drained and pressed (if it’s not silken).
3. Add finely shredded cabbage (~2 cups), julienned cut carrots (~1 large carrot), finely chopped assorted peppers (~1.5 cups). [You can also add mushrooms, green beans, broccoli, or any other veggies, also the quantity is approximate, you can always increase or decrease according to preference or availability)
4. Cook till the veggies are soft 2-3 mins, add 1 tsp black pepper, 1 tbsp soy sauce, 1 tbsp vinegar, salt to taste. You can also add 1 tbsp schezwan sauce to this.
5. Add the tofu and noodles, mix everything until combined properly.
6. Wrap the filling in the wonton wrappers; Apply water on one end lengthwise, place 1 -2 tbsp of filling and roll it from the other end to the wet one, sticking it also on the sides using some water. [Use any method preferable, but I used the spring roll method.]
7. In an airfryer, add 8-10 pieces, spray lightly with oil and airfry on 380F for 6-7 mins, flipping in between, and checking for crispness. Serve immediately with a ginger soy dipping sauce that I shared here.
